Mamiko is a certified nutritionist and former teacher at the Kushi Macrobiotic Institute in Japan. She has gained extensive experience in renowned establishments such as Chez Panisse in California, the world-renowned restaurant and pioneer of the ‘Slow Food Movement,’ as well as at Sayuri’s Healing Food in Ubud and Purple Valley Yoga Retreat in Goa. Mamiko now blends the knowledge of Macrobiotic food, raw food, Ayurvedic food and slow food knowledge in the kitchens of Ashtari and Terra to create healthy, sustainable and delicious meals.
1. All our food is vegan and mostly gluten-free.
*We have choice for raw local wild honey for some items*
2. 20% of our vegetables come from our own organic garden.
3. We use fresh homemade coconut milk & almond milk.
4. We do “activate” our seeds & nuts as well as our rice, which
increase their nutrient value.
5. We use superfood.
6. We use home made fermentation seasoning (miso, coconut yogurt, shiokoji) to enhance flavors And nourishing value. No MSG.

We invest immense energy and thought into what we source and from whom, ensuring that only the best ingredients make their way onto our menu. If something is out of season or doesn’t meet our quality standards, we simply won’t use it. By supporting local organic farmers, we enhance the taste and freshness of our dishes while reducing environmental impact by shortening the distance from farm to table.
Many of the items we serve are grown in our group restaurant Ashtari’s permaculture garden, nourished by compost from our kitchen-an embodiment of our commitment to sustainability.
